Black Berry Recipes

Anthony Pace's Butterscotch Blackberries
Preparation time: 10 min.
Cooking time: 5 min.


6 ounces Driscoll's blackberries, or strawberries or raspberries
2 Tbs. butter
2 Tbs. scotch whiskey
2 Tbs. brown sugar
4 slices angel food cake, or French toast or scoops ice cream


Rinse and drain berries. In skillet over medium-high heat, melt butter and cook just until beginning to brown slightly. Add berries and cook and stir just until they begin to give off juices. Add the scotch and then ignite with long-handled match. Stir until flames die. Stir in brown sugar and cook until dissolved and sauce is thick. Serve at once over ice cream, French toast or angel food cake.

Blackberry Gazpacho
Preparation time: 10 min.

3/4 lb. Driscoll's blackberries
1 cup dry red wine, Cabernet Sauvignon or Pinot Noir
1/4 cup sugar
1 Tbs. plus 1 tsp. fresh lemon juice, or to taste
salt and freshly ground black pepper
1/4 cup sour cream or plain yogurt
6 ounces Driscoll's raspberries, rinsed and drained
6 ounces Driscoll's blueberries, rinsed and drained


Rinse and drain the blackberries and puree in blender or food processor along with wine and sugar until smooth, about 1 to 2 minutes. Press through strainer to remove the seeds. Stir in lemon juice, season lightly with salt and pepper. Cover and chill several hours or overnight.

To serve, ladle the gazpacho into chilled soup plates, footed glasses or bowls. Drizzle or spoon on the sour cream and scatter with raspberries and blueberries. (You may not need all the raspberries and blueberries – they can be treats for the cook.) Top each serving with a mint sprig or coarsely chopped mint.

Blackberry Glazed Wings with Dipping Sauce
Preparation time: 15 min.
Cooking time: 20 min.


1 cup Driscoll's blackberries
12 chicken wings
1/4 cup vegetable oil
1/4 cup lemon juice
1/4 cup Worcestershire sauce
1/4 cup dark beer
1 clove garlic
1 tsp. salt
1 tsp. ground black pepper


Place chicken wings in large mixing bowl. Combine remaining ingredients in blender; blend until smooth. Reserve approximately 3/4 cup sauce; cover and refrigerate until ready to serve. Pour remaining sauce over wings, tossing to coat thoroughly. Cover and refrigerate 2-4 hours or overnight. To cook, spray roasting pan with nonstick spray. Shake excess marinade off wings and place in roasting pan. Bake at 450°F 20-25 minutes, until cooked through and well browned. Remove wings; place on serving platter with bowl of reserved dipping sauce.

Shortcut: Buy pre-cooked wings from supermarket deli. Prepare blackberry sauce as directed above. Use sauce to baste while re-heating wings. Serve extra sauce for dipping.

This recipe serves 6 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 6 only.
