Cherry Varieties
BING
The leading commercial sweet cherry in North America. Fruit is firm, juicy and a deep, mahogany red when ripe. Exceptionally large fruit of finest quality, with an intensely sweet, vibrant flavor. Bing has become the standard to which other varieties are compared.
17-19% Sugar.


RAINIER
A very attractive, exceptionally large, yellow cherry with a bright red blush. Rainier has a distinctive and superior appearance among sweet cherry varieties. Delicately flavored with extraordinary sugar levels, the flesh is pure yellow, very firm and finely textured. A premium niche variety that ripens after Bing.
17-23% Sugar.

How to Freeze




1.   Rinse firm, ripe cherries in cold water; drain thoroughly


2.   Pack cherries in plastic freezer bags or freezer-proof containers. Remove excess air; fasten or cover tightly.


3.   Freeze.
Freezing Tips:
  Before freezing, label and date each plastic bag or container.
Freezer should be 0°F. or lower
Do not overload freezer.
For fastest freezing, place bags directly on freezer shelves. Leave space around each bag until contents are frozen.
Serving Tips:
Remove amount of cherries needed, reseal plastic bag or container and return to freezer immediately.
Serve cherries partially frozen for best flavor and texture. Dip in chocolate for a special treat.
Remove stems and pits; add to salads, sauces, toppings and batters.
