Spray an 8-inch non-stick skillet with non-stick cooking spray; heat over medium-high heat.
Pour eggs into hot skillet; tilt to spread evenly. Cook until top is almost set. Turn with spatula
and cook 30 seconds more. Turn cooked eggs onto a plate; cut into thin strips about 2 inches long.
Combine egg strips, cooked rice, diced mango, raisins, peanuts and hoisin sauce in large bowl.
Toss well.
Lay 12 lettuce leaves flat on work surface. Use additional lettuce leaves to line a serving platter. Spread rice mixture onto lettuce leaves, leaving a 1-inch margin all around. Fold sides of lettuce toward center then roll up the leaves. Place seam side down on serving platter. Garnish with mango slices, if desired.
