Pork Chops with Bacon and Wine
Serves: 2 – 4

Ingredients:
8 slices bacon, diced
3/4 cup dry white wine
1/4 cup chopped green onions
4 pork chops, loin, about 1 inch thick
salt and pepper
2 tablespoons flour
4 tablespoons butter
1/2 cup whipping cream
1 teaspoon Dijon mustard
1 tablespoon chopped parsley

Preparation:
Combine diced bacon, wine and green onions; let stand for 20 minutes. Drain and reserve the wine. Season pork chops with salt and pepper then dredge in flour. Heat butter in a large skillet. Brown the pork chops over medium heat for about 7 minutes on each side. Add the bacon and green onions. Cook for about 4 minutes. Add the reserved wine and cream; cover and simmer for 10 to 12 minutes or until chops are tender. Remove the pork chops to a warm serving plate. Simmer cream sauce for 3 minutes longer; add mustard and parsley to the sauce and heat through.
Serves 4.
