4-5-lb. Aged Prime Rib Roast
1/3 cup Olive Oil
2 Tbsp. Lemon Juice
3 Tbsp. Fresh Rosemary Leaves
4 Garlic Cloves, minced
1 teaspoon Black Pepper
Preheat oven to 450?. Combine olive oil, lemon juice, rosemary leaves, garlic and pepper and rub over the meat surface. Place the roast in a preheated oven for 20 minutes, this will sear the roast and seal the juices. Reduce the heat to 350? and continue cooking for 26-32 minutes per pound. A meat thermometer is desirable to test the degree of doneness. Remove the roast when the thermometer reads 5 degrees below the desired doneness (Rare140?, Medium160?, Well170?.) Remove from oven and allow to rest for 10 minutes before carving.
