1/4 cup Olive Oil
2 Tbsp. Red Wine Vinegar
2 Tbsp. Cooking Sherry
1/4 cup Honey
1 1/2 tsp. Ground Cumin
3/4 tsp. Anise Seed
1/2 tsp. Ground Cinnamon
4 Cornish Game Hens
Salt & Pepper
Combine olive oil, vinegar, sherry, cumin, anise seed and
cinnamon in a small heavy saucepan. While stirring constantly, simmer until mixture thickens slightly, about three minutes. Remove glaze from heat. Brush hens with glaze, then salt and pepper generously. Roast in 400°F. oven 1 to 1 1/4 hours, until thigh juices run clear when pierced. Baste every 10 minutes.
