Quick Summer Salad
Serves 4 |

Ingredients
1 package PERDUE® FIT & EASY® Boneless, Skinless Chicken Breasts, Thin-Sliced
2 tablespoons oil
Salt and ground black pepper to taste
1 package bacon (8 ounces)
2 bags European Style prepackaged salad mix
1/2 pound Brie cheese, chilled and cut into small pieces
1/4 cup chopped red onion
Raspberry-flavored salad dressing
Instructions

1. Heat oil in a large, nonstick skillet.

Cut cutlets into strips and season with salt and pepper to taste. Add chicken to pan and stir fry until no longer pink.

Meanwhile, microwave bacon until crisp. |

Divide salad among 4 plates. Divide chicken, bacon, cheese and onion among each plate. Drizzle dressing over each salad to taste. |
