4 Fresh Sockeye Salmon Fillets or Steaks
1 tsp. Lemon Rind, grated
1/4 cup Lemon Juice
1 Tbsp. Extra Virgin Olive Oil
2 tsps. Dijon Mustard
Salt and Black Pepper to taste
In a shallow baking dish combine the lemon rind, lemon juice, olive oil, Dijon mustard, salt and pepper along with the fresh salmon fillets or steaks. Cover and let marinate for 45-60 minutes. Remove salmon from marinade and place on a greased grill rack. Cook for approximately 15 minutes over medium to mediumhot heat, basting with remaining marinade while turning fillets. Fish will flake easily when done.
