Scalloped Oysters
1/4 lb. Butter
2 cups Freshly Rolled Cracker Crumbs
1 pint Oysters
Salt, Pepper, Nutmeg
Old Bay Seasoning
1/2 cup Heavy Cream

Butter a shallow baking dish well and cover bottom with a layer of cracker crumbs. Cover with a layer of oysters, dust with seasonings and drizzle a little cream over. Dot with butter. Melt several tablespoons of butter and mix with about half of the remaining cracker crumbs. Spread over layer in baking dish. Add another layer of oysters and seasonings and more cream. Top with remaining plain cracker crumbs, dot heavily with butter and season. Drizzle over remaining cream. May be prepared ahead to this point; cover tightly and refrigerate. When ready to bake, preheat oven to 425? and bake for
20-25 minutes, until lightly browned and bubbling. Serve hot.
