Create a magnificent restaurant quality fresh seafood dish that you would think could be found in only the finest restaurants. 6 6-oz. Fresh Sea Bass Fillets 1 cup Cream
1/2 cup Butter 2 tsps. Flour
1 cup Dry White Wine 1 Tbsp. Cold Water
2 cups Clam Juice
Rinse, then pat fillets dry with paper towels. Melt the butter in 13x9x2" baking pan, dip fish in butter and arrange in pan, skin side down. Pour wine over fish. Bake in 350° oven for 10 minutes, basting frequently with pan juices. Transfer fish to heated platter and keep warm. Strain broth into saucepan, add clam juice and boil 10 minutes. Add cream and boil rapidly to reduce liquid, about 7 minutes. Combine flour and water, whisk into hot mixture and cook until thickened. Serve wine sauce on side. Makes 6 servings.
