Asian Chicken Salad Wraps
This protein-packed grab-and-go meal is loaded with veggies that make crunchy contributions to the vitamin tally. Crushed pineapple adds a subtle, pleasant sweetness.
- Makes 4 servings
1. In a large bowl, combine chicken, pineapple, celery, red pepper, carrot and green onions. In a small bowl, whisk together teriyaki sauce, peanut butter, lemon juice and ginger. Stir sauce into chicken mixture.
2. Place about 1⁄2 cup chicken mixture on each tortilla. Fold in tortilla sides; fold over ends. Sprinkle 1 tablespoon chow mein noodles on each wrap, if desired.
