Bacon Wrapped Scallop Skewers

  1. Soak wooden skewers in water 30 minutes. Cut bacon slices in half crosswise. In a large skillet, cook the bacon over medium heat about 4 minutes or until partially cooked; drain.
  2. Preheat oven to 425°F. Wrap one piece of bacon around a scallop; skewer to hold bacon in place. Repeat with remaining scallops. Place on foil-lined baking sheet. Mix honey and Sriracha sauce, and brush onto scallops.
  3. Bake 6 minutes. Turn and brush again with honey mixture. Bake 6 to 8 minutes more or until bacon is crisp.
