Berry and Chicken Salad with Cinnamon Vinaigrette
There’s plenty here to fascinate taste buds. Juicy berries, meaty chicken slices and piquant red onion rings nestle among vitamin-rich spinach leaves. A whisper of cinnamon and a splash of hot pepper sauce spice up the light raspberry-flavored vinaigrette.
- Makes 6 servings
1. For salad, in a large bowl combine spinach, strawberries, blueberries and onion. Set aside.
2. For vinaigrette, in a jar with a tight-fitting lid combine raspberry vinegar, sugar, olive oil, salt, cinnamon and hot pepper sauce. Shake well.
3. Drizzle vinaigrette over salad. Gently toss.
4. To serve, divide salad among 6 plates. Top each salad with 2 ounces of the thinly sliced chicken breast. Sprinkle with pecans, if desired.
