Brussels Sprouts with Crispy Prosciutto

  1. In a large pot, bring salted water to boiling. Add Brussels sprouts and cook 4 minutes. Drain sprouts and plunge into bowl of ice water.
  2. In a large skillet, heat oil over medium heat. Add prosciutto; saute until crisp, 3 minutes. Add garlic and sprouts. Cook for 3 minutes until sprouts are lightly browned, stirring occasionally. Stir in broth. Simmer, uncovered, for 5 minutes or until most of the liquid is evaporated and sprouts are tender (if needed, add more liquid ½ cup at a time to ensure sprouts cook properly). Season to taste with salt and pepper.
