Butterscotch Oatmeal Cookies

Piled in a cookie jar or tucked in a lunch box, these bumpy oatmeal cookies make life seem a little sweeter.

1. Preheat oven to 350°F. Lightly spray cookie sheets with nonstick cooking spray.

2. In a large bowl, beat sugars, shortening, egg, water and vanilla until smooth.

3. In another large bowl, combine oats, flour, salt and baking soda. Add to shortening
mixture, mixing just until blended. Stir in butterscotch chips.

4. Drop by rounded tablespoons onto prepared cookie sheets. Bake for 12 to 15 minutes or until lightly golden.
