Caprese Salad with Balsamic Reduction
Available in a wealth of sizes and colors, heirloom tomatoes are one of the glories of summer. Pair them with fresh mozzarella and basil, add a drizzle of balsamic and they’ll really shine

- Makes 6 to 8 servings
1. For balsamic reduction, in a small saucepan combine balsamic vinegar and brown sugar. Cook over medium heat until mixture has reduced to about half the amount. Remove from heat. Stir in olive oil. Set aside.
2. Arrange tomatoes and mozzarella on a serving platter. Sprinkle with salt and pepper. Drizzle with balsamic reduction. Top with basil leaves.
