Caramelized Onions and Grilled Filet Mignon

An entrée as special as filet mignon calls for exceptional treatment. Sweet, savory and spicy at the same time, aromatic caramelized onions crown each filet without overpowering. Beef is a good source of protein, and of iron and zinc, minerals lacking in many diets.

Makes 4 servings



1. For the chipotle-caramelized onions, in a nonstick skillet combine onion slices, brown sugar, broth, vinegar, olive oil, chipotle pepper sauce and garlic. Cook, covered, over medium heat for 15 to 20 minutes, stirring occasionally, until onions are caramelized and most of the liquid has evaporated. Remove from heat; set aside.

2. Rub salt and pepper onto both sides of filets. Grill to desired doneness, 5 to 7 minutes per side for medium-rare meat. Remove from grill; let filets rest a few minutes.

3. Top each filet with chipotle-caramelized onions.
