Chewy Cranberry Trail Bars
These chewy bars have a texture similar to packaged granola bars, but offer much more. Flaxseed supplies fiber and omego-3 fatty acids while tart cranberries contribute an antioxidant punch.

1. Preheat oven to 300˚F. Spray an 8-inch square baking dish with nonstick cooking spray; set aside. On a large baking sheet, combine oats, graham cracker crumbs and almonds. Bake for 10 minutes, stirring occasionally, until oats and almonds are light brown. Remove from oven. Stir in flaxseed and cranberries; set aside. Increase oven temperature to 350˚F.
2. Meanwhile, in a medium saucepan combine honey, brown sugar and butter. Cook, stirring constantly, over medium heat until butter is melted. Stir in oat mixture and vanilla. Press firmly into prepared dish.
3. Bake for 25 minutes. Allow bars to cool before removing from baking dish. Cut into squares. Store in an air-tight container up to 1 week.
