Chicken Salad Supreme

Every element contributes to this excellent salad. Water chestnuts, pecans and celery give it crunch; grapes and pineapple add juicy sweetness; ginger, onion and curry enhance the flavor and a tangy dressing brings it all together.

Makes 6 servings



1. In a large bowl, combine chicken, water chestnuts, pecans, grapes, celery, and ginger.

2. For dressing, in a small bowl stir together mayonnaise, vinegar, onion, soy sauce and curry powder. Toss dressing with chicken mixture. Cover and chill before serving.

3. To serve, spoon salad onto pineapple slices arranged on lettuce leaves.
