Chili-Lime Shrimp and Pasta
Here’s proof that delicious meals can come together quickly and easily. Shrimp, tossed in seasoned lime juice, roast for a mere 5 minutes. The shrimp have a bit of kick. Complement them with tall, cold beverages.
- Makes 4 servings
1. Preheat oven to 400°F. Line a baking sheet with aluminum foil; set aside.
2. In a large bowl, combine 1 tablespoon lime juice and salt; whisk in oil. Add shrimp and toss to coat.
3. Arrange shrimp 1 inch apart on prepared baking sheet.
4. Roast about 5 minutes or until shrimp are firm, pink and opaque. Drizzle with the remaining 1 teaspoon lime juice and sprinkle with fresh cilantro. Season to taste with salt and pepper.
