Chocolate Chip Cookie Ice Cream Sandwiches

There’s nothing like hot summer days to make you crave a frozen treat. Purchased cookies make these extra easy. For this recipe, look for ice cream in block form that comes in a cardboard container.

Cut carton from ice cream. With a very sharp knife, cut ice cream block crosswise into six even slices. Using a 4-inch round cookie cutter, cut large ice cream circles out of slices (you should have 6 ice cream circles). Save excess ice cream for another use.

To assemble sandwich, place ice cream slice between two cookies, centering cookies on the ice cream. Roll edge of ice cream in sprinkles. Wrap sandwiches in plastic wrap and freeze for 1 hour or until firm. Cookies may be frozen for up to 3 months.
