Cilantro Lime Rice

  1. In a large saucepan, combine water, rice, butter and salt. Bring mixture to boiling; reduce heat. Simmer, covered, for 16 minutes or until the rice is tender and liquid is absorbed. Remove from heat. Fluff rice with a fork. Cover saucepan with a clean dish towel and replace lid. Let stand for 15 minutes.
  2. Meanwhile, zest and juice lime. Just before serving, stir zest, juice and cilantro into rice.
