Classic Gazpacho

  1. Place tomatoes in a blender. Cover and process until smooth. Add bread, cucumber, pepper, onion, vinegar, honey, garlic, cumin and salt to pureed tomatoes in blender. Cover and process until smooth. With blender running, drizzle in ¼ cup olive oil. Season with additional salt to taste.

 

  1. Cover and refrigerate at least 2 hours or up to 24 hours. If desired, top each serving with chopped tomato and cucumber. Drizzle each with additional olive oil.
