Cola BBQ Chicken
All-American BBQ chicken gets a fun twist with a from-scratch BBQ sauce made with cola. To make things easier, the chicken is prebaked so the time on the grill is just to heat and crisp.

- Place chicken in a large resealable plastic bag. Add lemon juice, oil, salt, pepper and garlic. Marinate in the refrigerator for 4 to 6 hours. Prepare Cola BBQ Sauce; cover and chill.
- Preheat oven to 450°F. Line a baking sheet with aluminum foil. Drain chicken and place on prepared baking sheet. Bake thighs and/or drumsticks for 45 minutes or until fully cooked (175°F). (Bake breasts or wings for 25 minutes or until cooked to 160°F.)
- Meanwhile, prepare a charcoal or gas grill with a greased grill rack for direct grilling over medium heat. Heat Cola BBQ Sauce over low heat. Grill chicken thighs and/or drumsticks for 10 minutes or until heated through and crispy, turning occasionally and basting with Cola BBQ Sauce. (For chicken breasts or wings, allow 10 minutes grilling time or until fully cooked at 165°F.)
COLA BBQ SAUCE: In a large saucepan, heat 1 tablespoon vegetable oil over medium heat. Cook ½ cup finely chopped onion and 1 tablespoon minced garlic for 2 minutes, stirring occasionally. Add 4 (12-ounce) cans cola. Bring mixture to boiling; reduce heat. Simmer, uncovered, for 30 minutes or until sauce is reduced to 1 cup. Stir in 1 cup ketchup, 1 cup apple cider vinegar, ½ cup yellow mustard, ⅓ cup brown sugar, ½ cup molasses, 2 tablespoon Worcestershire sauce, 3 tablespoons lime juice and 2 teaspoons ground pepper. Simmer the mixture for 20 minutes more.
