Cold Strawberry Soup

Strawberries contain more vitamin C than any other berry. One serving of this refreshing soup gives you nearly twice your daily requirement of vitamin C. Soaking the berries in amaretto creates the soup base. To make the soup without amaretto, skip the first step altogether.

Makes 6 servings (1 cup each)



1. In a large bowl, combine strawberries and amaretto. Cover and refrigerate at least 4 hours or overnight.

2. Drain strawberries. Set aside 1 cup of the strawberry slices. In a blender container, combine remaining strawberries, yogurt, orange juice, milk, sugar, honey, cinnamon and vanilla extract. Purée until smooth. 

3. Pour soup into a large serving bowl. Stir in reserved strawberry slices. Cover and refrigerate until serving time.
