Confetti Couscous Salad

- In a saucepan, heat oil over medium heat and cook pine nuts for 2 minutes or until lightly browned, stirring frequently. Add couscous; cook, stirring frequently for 1 minute.
- Add broth, bring to a boil. Remove from heat and let stand, 5 minutes. Fluff couscous with a fork.
- Stir in onion, apricots, carrot and parsley. Season to taste.
