- Preheat oven to 375°F. In a medium saucepan, combine cranberries, apple juice, sugar, half of the orange zest and gingerroot. Bring to boiling over medium-high heat. Reduce heat to medium-low and simmer 10 minutes. Remove from heat.
- Meanwhile, place Brie on a baking sheet lined with parchment paper or foil. Bake 10 minutes or until cheese is softened. Transfer to serving dish. Top with cranberry mixture, pistachios and remaining orange zest. Serve with crackers.
