Fresh Tomato Bruschetta
Summer’s finest tomatoes served on toasted baguette slices will please any crowd. Adding a splash of balsamic vinegar brings out the sweetness of the tomatoes.
- Makes 10 appetizer servings
1. Preheat oven to 400°F. Seed and finely chop tomatoes. Place tomatoes in a bowl; stir in olive oil, vinegar, garlic, basil, salt and pepper. Let stand at room temperature for 10 minutes.
2. Cut baguette on the diagonal into 1/2-inch slices. Arrange slices on two large baking sheets. Brush with olive oil. Bake until bread is pale golden and crisp, about 10 minutes. Cool on a wire rack.
3. Just before serving, arrange baguette slices on a serving platter. Using a slotted spoon, spoon tomato mixture onto toasts.
