Fruit & Nut Energy Balls

Dried fruit and crunchy nuts, plus muesli—a wholesome mixture of oats and other whole grains—forms the base of this high-fiber, low-fat snack.

  1. In a large bowl, stir together muesli, cashews, cherries, sunflower seeds and flaxseed meal.
  2. In a small bowl, combine almond butter, agave nectar and vanilla. Add to muesli mixture;combine well.
  3. Shape mixture into 1-inch balls. Transfer to an airtight container. Chill for 30 minutes.
  4. For convenience and portability, wrap balls individually in plastic wrap. Store in refrigerator for up to 1 week or in freezer for up to 1 month.
