Place rack in center of oven and preheat to 400 degrees. In a small bowl, mix the Italian herb seasoning with olive oil. Place pizza crust on pizza pan. Brush pizza crust with herb/oil mixture, reserve remainder.
In a large mixing bowl, gently toss vegetables with remaining herb/oil mixture. Spread coated vegetables evenly over pizza crust, leaving about ½-inch border around the edges. Top vegetables with shredded cheese. Bake 10 minutes or until cheese is melted.
