Goat Cheese & Sweet Potato Crostini

Crispy on the outside and creamy inside, these tiny toasts are a specialty of northern Italy.

  1. For polenta crostini, preheat broiler. Trim ends of polenta. Cut polenta into twelve ½-inch-thick slices. Brush polenta slices with oil. Place polenta slices on a baking sheet. Broil for 10 to 15 minutes or until crisp, turning once. Let cool for 5 minutes.
  2. Spread goat cheese on polenta. Top with cooked sweet potatoes. If desired, garnish with sage. Cover and chill up to 4 hours.
