Green Grape Gazpacho

Grape gazpacho is a refreshing twist on its tomato-based cousin. This version has a traditional feel, but the grapes add a new flavor dimension providing a note of sweetness in the mouth at the first taste, but also the kick of a little acidity for a great finish. Serve by the bowlful or in shot glasses with a crescent of toasted bread.

Yield: 6 bowls or 40 shooters (approx. 1 ½ oz. each)



Combine all ingredients except sweet red peppers in a large container.  Blend in 2 or 3 batches in a blender or food processor until very smooth.  Let chill for 1 to 2 hours.  Ladle into individual shot glasses and sprinkle each glass with two or three small dices of sweet red pepper.

Optional:  small, toasted crostini
