Grill-Blackened Chicken with Watermelon Salsa

Sweet and tangy fruit salsa perfectly complements the spicy Cajun seasoning on the chicken. To make preparation of the salsa easy, purchase cut-up watermelon in the produce section of your local Marsh store and cut the chunks into smaller pieces.

1. For brine, in a shallow, medium bowl stir together ice water, kosher salt and sugar until salt and sugar dissolve. Submerge chicken breasts in brine. Cover and refrigerate 1 hour. Remove from brine; pat dry.

2. In a small bowl, combine Cajun seasoning, sugar and oil; rub over all surfaces of chicken.

3. For salsa, in a medium bowl stir together lime zest, lime juice, agave nectar and kosher salt. Stir in watermelon, bell pepper, red onion and cilantro. Set aside.

4. Oil grill grate. Heat grill for direct cooking to medium-high heat. Grill chicken for 7 to 9 minutes per side or until no longer pink (165˚F). Serve with salsa.

Quick Tip: This level of seasoning makes moderately spicy chicken. For extra kick, use 2 tablespoons Cajun seasoning.
