Grilled Jumbo Shrimp Skewers
Garlic, cilantro and citrus juice make up the lively marinade that infuses the shrimp before they hit the grill. Serve the skewers over rice or salad greens tossed with chunks of pineapple and/or mango.
- Makes 4 servings
1. Peel and devein shrimp. For marinade, in a medium bowl combine olive oil, lemon juice, lime juice, cilantro, garlic, sea salt and pepper. Toss in shrimp. Cover and marinate in the refrigerator for 30 minutes.
2. Drain shrimp; discard marinade. Thread shrimp onto four skewers. Place skewers on the rack of an uncovered grill directly over medium heat. Grill for 8 to 10 minutes or until shrimp are opaque, turning once.
Quick Tip: Soak wooden skewers in water for 30 minutes before threading with shrimp to prevent them from burning on the grill, or use metal skewers.
