Healthy Broccoli Mini Frittatas
Freeze a batch of these satisfying little breakfast entrées. They heat up in a minute for a quick start to your day.
- 12 (1 frittata each)
1. Preheat oven to 375°F. Line 12 muffin tins with paper liners. Divide broccoli among muffin cups; set aside.
2. In a medium bowl, mix together egg substitute, eggs, cheddar cheese, oregano and basil; season with salt and pepper, if desired. Pour about 1/4 cup egg mixture into each broccoli-filled muffin cup. Top each with 1 teaspoon Parmesan cheese.
3. Bake for 25 to 30 minutes or until light golden brown.
4. Frittatas can be frozen in freezer-safe containers. To reheat, microwave on high for 45 to 60 seconds or until heated through.
