Healthy Chicken Salad Pitas
Grapes, celery and parsley add flavor and crunch to this healthful pocketed chicken salad. Most of the fat in traditional chicken salad comes from mayonnaise—substituting fat-free yogurt for most of the mayonnaise cuts the fat considerably.
- Makes 6 servings (1/2 pita each)
1. In a large bowl, whisk together yogurt, mayonnaise, curry powder and, if desired, salt. Fold in chicken, grapes, celery, onions and parsley.
2. Place a generous 1⁄2 cup chicken salad in each pita bread half.
