Heart Healthy Salad
Like the chopped fresh vegetables, fresh basil is one of the significant flavor ingredients in this summery salad. Three powerful antioxidants in tomatoes—vitamin A, vitamin C and lycopene—as well as the monounsaturated fat in avocado, make this a heart-healthy salad.
- Makes 8 servings
1. For salad, in a large bowl combine tomatoes, cucumber, avocado, olives and basil.
2. For vinaigrette, in a small bowl whisk together vinegar and olive oil.
3. Evenly divide salad among 8 salad plates. Drizzle with vinaigrette. Season individual servings to taste with sea salt and black pepper.
