Lemon-Herb Chicken Skewers
Lemons, fresh herbs and garlic combine to give chicken tenders powerful flavor everyone will love. Use skewered chicken and veggies on pitas, as desired.

- In a large bowl, whisk together olive oil, lemon juice, rosemary, parsley, garlic, salt and red pepper. Add chicken; toss to coat. Cover and marinate in refrigerator for 30 minutes. Meanwhile, soak 24 wooden skewers in water for 30 minutes.
- Prepare a charcoal or gas grill with greased grill rack for direct cooking over medium-high heat. Thread 1 chicken tender onto each skewer; place skewers on a platter. Cover and refrigerate until ready to grill.
- Grill skewers in batches for 10 minutes or until chicken is no longer pink, turning once.
- To assemble sandwiches, remove chicken from skewers. Tuck chicken into pitas with desired accompaniments. Top with Greek-Herb Vinaigrette.
