Lemon-Herb Chicken Skewers

Lemons, fresh herbs and garlic combine to give chicken tenders powerful flavor everyone will love. Use skewered chicken and veggies on pitas, as desired.

  1. In a large bowl, whisk together olive oil, lemon juice, rosemary, parsley, garlic, salt and red pepper. Add chicken; toss to coat. Cover and marinate in refrigerator for 30 minutes. Meanwhile, soak 24 wooden skewers in water for 30 minutes.
  2. Prepare a charcoal or gas grill with greased grill rack for direct cooking over medium-high heat. Thread 1 chicken tender onto each skewer; place skewers on a platter. Cover and refrigerate until ready to grill.
  3. Grill skewers in batches for 10 minutes or until chicken is no longer pink, turning once.
  4. To assemble sandwiches, remove chicken from skewers. Tuck chicken into pitas with desired accompaniments. Top with Greek-Herb Vinaigrette.
