Mini Caramel Apples

  1. Line a baking sheet with wax paper; set aside. Using a melon baller, scoop balls from apples. Submerge balls in water to keep from browning.
  2. In a medium saucepan, combine caramel candies and cream. Cook over medium low heat until candies are melted and smooth, stirring frequently. Cool slightly.
  3. Just before dipping, remove apple balls from water; pat dry with paper towels. Insert lollipop sticks into apple balls. Dip balls into caramel mixture, turning to coat. Place on a prepared baking sheet to set.
