Mojo Shrimp Skewers

  1. Soak wooden skewers in water 30 minutes. Grate enough orange zest to get 1 tablespoon and squeeze enough orange juice to make ¼ cup. In a bowl, whisk together zest, juice, oil, mustard, garlic, salt and red pepper. Pour half into another bowl; set aside.
  2. Thread one shrimp on each skewer. Arrange skewers on a foil-lined baking sheet. Brush with juice mixture. Broil 6 inches from heat 2 minutes; turn and broil 1 to 2 minutes more or until shrimp are opaque.
  3. Drizzle with reserved juice mixture. Sprinkle with cilantro.
