  1. In a large saucepan, cook sweet potatoes in boiling salted water for about 15 minutes or until tender. Drain and return sweet potatoes saucepan.
  2. Mash sweet potatoes with a potato masher until
    smooth. Stir in orange juice, honey and ginger. Season to taste with salt.
