Pecan and Herb Pork Chops
The quest for a sumptuous-yet-simple way to cook pork chops ends here. As the nutty sage-flecked coating bakes on the chops, the pecans and bread crumbs develop a toasted flavor, enhancing the flavors already infused by marinating.
1. Preheat oven to 400˚F.
2. In a shallow baking dish, combine olive oil, garlic and rosemary. Add pork chops to oil mixture, turning to coat. Let marinate at room temperature for 10 to 15 minutes.
3. Meanwhile, in a pie plate stir together bread crumbs, pecan pieces and sage.
4. Remove pork chops from oil mixture, letting excess oil drip off. Press both sides of pork chops into bread crumb mixture to coat.
5. Place in a greased baking dish and bake for 20 to 25 minutes or until internal temperature reaches 160˚F.
