Pumpkin-Applesauce-Flax Bread

Pumpkin and applesauce work together to make this bread moist without any added fat. Flaxseed adds health benefits by supplying omega-3 fatty acids which promote bone health, reduce blood clot formation and help lower blood pressure.

Makes 12 servings



1. Preheat oven to 350˚F. Lightly grease a 9×5-inch loaf pan.

2. In a large bowl, whisk together water and ground flaxseed. Stir in brown sugar, pumpkin and applesauce.

3. In a separate bowl, combine flours, baking soda, cinnamon, salt, baking powder and pumpkin pie spice. Stir flour mixture and pecan pieces into pumpkin mixture, stirring until smooth. Pour into prepared pan.

4. Bake for 65 to 70 minutes or until a toothpick inserted into center of the loaf comes out clean.
