Quesadilla Pies

  1. Press a tortilla into the bottom of a sandwich or pie iron. Sprinkle 1/4 cup shredded cheese on tortilla. Spoon on cheese dip. Place 3 pepper strips, chicken, 1½ tablespoons salsa and remaining 3 pepper strips on top. Sprinkle with remaining ¼ cup shredded cheese and place remaining tortilla on top.
  2. Close the iron, securing the lock. Hold the iron 6 to 10 inches above the campfire for 8 to 10 minutes or until quesadilla is heated through. Carefully remove quesadilla from iron. If desired, serve with sour cream, guacamole and additional salsa.
