Red, White and Blue Berry Trifles

Fresh summer berries infuse this spectacular dessert with sweetness. Purchased angel food cake makes these easy to assemble.

1. In a chilled mixing bowl, combine whipping cream, mascarpone cheese, powdered sugar, and vanilla. Beat with an electric mixer on medium until soft peaks form (tips curl).

2. Combine raspberry preserves with 1 tablespoon of the water; set aside. Combine blackberry preserves with remaining 1 tablespoon water; set aside.

3. To each of six 8-ounce parfait glasses, add layers of cake cubes, whipping cream mixture, strawberries and raspberries, raspberry preserves mixture, and whipping cream mixture. Continue adding layers of cake cubes, whipping cream mixture, blackberries and blueberries, blackberry preserves mixture and whipping cream mixture. Add layers of remaining cake cubes and whipping cream mixture. Top with remaining berries. Serve immediately or cover and chill for up to 4 hours.
