Shrimp and Black Bean Gumbo

This protein-packed stew features a bounty of nutrient-rich veggies. The addition of okra and a good dose of Cajun seasoning give this healthy dinner its Creole flavor. Using a moderate amount of shrimp keeps this meal budget-friendly.

1. In a large skillet, heat oil over medium-high heat. Cook onion, bell pepper, celery and garlic in hot oil until softened. Transfer onion mixture to a large saucepan. Stir in tomatoes, black beans,  broth, Cajun seasoning and chili powder. Bring mixture to boiling; reduce heat. Cover and simmer for 10 minutes to blend flavors.
2. Stir in shrimp and okra. Cook for 3 minutes more or until shrimp turn pink and opaque. Ladle gumbo into shallow bowls over hot cooked rice. If desired, sprinkle with green onions.
