Stuffed Morel Mushrooms
Serves 3-4
Fresh Morel Mushrooms are a rare delicacy and are only available for a very short time. Morels only grow in temperate regions and are prized by even the most renowned mushroom hunters. They are easily identified by their tall, pointed caps and honeycomb-like surface and short, thick hollow stems. Fresh Morel Mushrooms have a nutlike flavor and an intense woodsy aroma. Hurry – they’ll only be here for a very short time!

12 Fresh Morel Mushrooms
1 Fresh Lime
1/2 cup Chopped Green Onions
1 clove Fresh Garlic, crushed
Fresh Herbs (choice)
1 1/2 cups Cooked Rice or Basmati Rice
Butter (as needed)

After fresh Morel Mushrooms have soaked in salt water for 24 hours, you are ready to begin. Mix herbs, chopped green onions and a large portion of crushed (or squeezed) garlic into rice. Stuff the Morels with mixed rice and bake in a covered pan for 30 minutes at 350°F. Melt generous portion of butter and more garlic and pour on Morels after 15 minutes. Just before serving, pour on juice from fresh lime.
