This hearty minestrone calls on potato gnocchi to replace traditional pasta.
- Makes 12 servings (1 cup each)
1. Spray a large stockpot with nonstick cooking spray. Sauté onion and garlic over medium-high heat until tender.
2. Add broth, beans, undrained tomatoes and carrots to stockpot. Simmer about 20 minutes or until vegetables are tender.
3. Stir in gnocchi, spinach and zucchini. Increase heat to high and bring to boiling; continue cooking 2 minutes to heat through. If desired, top each serving with Parmesan.
