Strawberry-Melon Goat Cheese Spinach Salad
A trio of taste sensations—fresh berries and melon, a sweet balsamic vinaigrette and tangy goat cheese—comes together in this easy salad. Sugar-glazed almonds add a nice crunch.

1. For glazed almonds, in a small skillet heat sugar and butter over medium-high heat until butter is melted. Add almonds; cook and stir 2 to 3 minutes or until sugar is liquefied and the almonds begin to brown. Remove from heat. Spread almonds in a single layer on a piece of foil to cool. Break into pieces.
2. For dressing, whisk together oil, vinegar, honey, mustard and salt; set aside.
3. Place spinach in a shallow bowl or on individual salad plates. Top with strawberries, cantaloupe, goat cheese and glazed almonds. Serve with dressing.
