1. In a large serving bowl, whisk together vinegar, lemon juice, parsley and cayenne pepper. Whisk in olive oil. Add watermelon, tomatoes, cucumber, onion, jalapeño pepper, salt and pepper; toss gently to combine. Cover and chill for at least 1 hour.
2. Just before serving, add spinach. If desired, serve portions over watermelon slices. Sprinkle each serving with cheese.
